Anyone else think of these when you think of the Christmas season?!! Snowballs, sandies!! I grew up making these with my mom and have such great memories of the holidays and family time. You will love these because they taste so yummy and close to the original...but WITHOUT the SUGAR...and they're completely KETO!!! Yep! That's right...they're KETO! Ingredients:
1 cup walnuts (blended to make walnut flour) (Get it HERE)
1/2 cup Coconut flour (+ 1-2 tbsp for end) (Get it HERE)
1/2 cup Grass-fed butter, melted
1 large Pastured Egg
1/2 cup Monk Fruit blended to make powdered sugar (we use the Golden variety) (*changed, not in original recipe) (Get it HERE)
1/2 tsp Vanilla extract (Get it HERE)
50 drops Liquid Stevia (Get it HERE)
2-4 Tbsp chopped pecans or desired amount (*added, not in original recipe) (optional) (Get it HERE)
Instructions:
Preheat your oven to 300 and line a baking sheet with parchment paper (Get it HERE).
Combine the melted butter, egg, stevia and vanilla extract in a large bowl and set aside.
Add the walnuts to a processor and pulse until ground. Pour walnut flour into a medium bowl and add the coconut flour and 1/4 cup of the Monk Fruit. Combine.
Add the dry mixture to the wet and stir to combine. Add the chopped pecans if desired.
At this point the dough should be soft, but firm enough to form into balls by hand without it sticking to your palms. If it is not the right consistency add 1-2 tbsp of additional coconut flour and combine. You can also use a small cookie scoop to scoop the cookies and then roll in the palm of your hand.
Make 15 equal sized balls and line the parchment paper. They will not spread in the oven. Bake for 30 minutes or until just before reaching golden brown.
Allow to cool for 5 minutes, and then roll the (still warm) balls in the remaining 1/4 cup Monk Fruit (blended to make powdered sugar). Place them back on the parchment paper and allow to full cool, another 20-30 minutes, until eating!
